Banana Crumb Muffins or Bread Recipe

Muffins UpcloseDo you have bananas that are about to go bad?  If so, don’t toss them out.  They are perfect for making banana muffins or bread.  In fact, they can even be be turning brown.  These muffins are not only easy to make but they are very moist and tasty.  The crumb topping was fantastic on top of the muffins even some of mine my muffins didn’t come out looking pretty.  I wanted to make something that was a bit different than the traditional banana bread recipe.

 

Ingredients Needed:

1 1/2 cups all-purpose flour or wheat flour depending on your preference

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt (optional, I never add salt to my recipes)

3 – 4 bananas mashed up

3/4 cup white sugar

1 egg, lightly beaten

1/3 cup butter, melted (I ran out of stick butter and used Country Crock spread, I filled up a 1/3 a cup and added a little bit extra since I didn’t melt it)

Crumb Topping:

1/3 cup packed brown sugar

2 tablespoons all-purpose or wheat flour

1/8 teaspoon ground cinnamon

1 tablespoon butter (I estimated based upon consistency of mixed ingredient, I more slowly after I began mixing the ingredients together)
