Directions:
- Preheat oven to 375 Degrees F.
- In large bowl mix the dry ingredients together: flour, baking soda, baking powder, and salt.
- In another bowl mix together the rest of the ingredients: mashed bananas, sugar, egg, and butter.
- Combine the dry ingredients with the banana mixture.
- In the bowl that held the dry ingredients, make the crumb topping by adding the brown sugar, 2 tablespoons of flour, and cinnamon. Add 1 tablespoon of butter (add additional butter if needed). When mixed together it should resemble course cornmeal.
- Lightly grease or line muffin tin with muffin liners.
- Spoon the mixture into the muffin pan or liners. It is important to only fill the muffin pan or liner about half full, if not they will overflow.
- Sprinkle the topping over the muffins. (not positive that I did this part correctly, it was difficult to sprinkle. I might have used too much butter but it didn’t affect the flavor at all.)
- Put the muffins into the over for 18 to 20 minutes.
- Use a toothpick to test to see if the muffins are fully cooked. If the toothpick comes out clean, then the muffins are perfect. If not, put them back into the oven until they are done.
- Enjoy!

To make banana bread using this recipe, pour the mixture into a bread pan and sprinkle the topping on the mixture.
